EU 7FP Project
An initiative focused on realistic food models with well-characterised micro- and macro-structure and composition.
DREAM brought together work on the design and development of realistic food models, with attention to their structure and composition.
Design and development of REAlistic food Models with well-characterised micro- and macro-structure and composition.
The project was managed by the Biotechnical Faculty, UL, at the University of Ljubljana. Its collaborative resources include objectives, the consortium, publications and past events.

The DREAM project page presents a European research initiative concerned with the design and development of realistic food models, with particular attention to their micro- and macro-structure as well as their composition. Rather than working with simplified stand-ins, the effort treats food as a complex, structured material whose internal organisation determines how it behaves, how it is perceived, and how it performs in practice. Within a Seventh Framework Programme context, the project positioned itself at the intersection of food science, technology and nutrition research, using a journalistic, information-first presentation to make its objectives, consortium work and published output accessible to a wide professional audience.
Managed by the Biotechnical Faculty at the University of Ljubljana, the project drew together collaborative resources spanning objectives, participating partners, publications and past events, offering visitors several ways to engage with the work. The emphasis on well-characterised models reflects a broader shift in food technology toward understanding structure at multiple scales, from the arrangement of components at fine level to the overall architecture of a food system. Readers interested in European nutrition, food technology or the practical application of modelling approaches will find the overview a useful entry point into the project's aims, its collaborative framework and the results it has shared with the wider scientific community.
